Efo (Greens Stew)
Â Â Â * 1 pound collard greens or spinach
Â Â Â * 1 can (8-ounce) tomato paste
Â Â Â * 1 can (8-ounce) tomato puree
Â Â Â * 1 large onion, diced
Â Â Â * l Tablespoon vegetable oil
Â Â 1. Wash the greens and tear into small pieces.
Â Â 2. In a large pot or saucepan, place the greens in water and add the oil.
Â Â 3. Boil greens until tender.
Â Â 4. Add tomato paste, tomato puree, and diced onion.
Â Â 5. Reduce heat to medium and simmer until vegetables are tender. Serve.
Makes 4 to 6 servings.
